I based the dressing for this slaw on the delicious dressing I created for my Apple Spring Mix Salad with Sweet Mustard Dressing. The sweetness of apple juice concentrate combined with the tang from Dijon mustard and the hint of anise from caraway seeds balances the sharpness of the cabbage.
You can shred your vegetables by hand with a grater or a knife, or use a food processor.
1/4 of a medium or 1/2 of a small red cabbage, shredded
2 large carrots, peeled and shredded
1 red pepper, thinly sliced
1/2 bunch parsley, minced
Sweet Mustard Dressing
1/4 cup Dijon mustard
1/3 cup apple juice concentrate
1/2 teaspoon caraway seeds (optional)
1/2 teaspoon celery seeds (optional)
1/2 teaspoon garlic powder (optional)
