For fun, I used Soy Curls to fill in for chicken in this traditional soup. The similarity is eerie. If you wish, you can substitute with 2 cups of cooked or canned beans such as chickpeas or white kidney beans.
Feel free to use any pasta type or shape you like in this recipe—gluten-free or otherwise. If you make this with longer noodles like spaghetti, break them into thirds before adding to the pot.

1 small yellow onion, diced
2 cloves garlic, minced
2 Tablespoons poultry seasoning blend (1 tsp each oregano, basil, rosemary, thyme, sage, and parsley)
1/2 teaspoon salt (optional)
4 stalks celery, sliced
4 carrots, peeled and sliced into rounds
454 grams/1 pound mushrooms, sliced
1 cup of Soy Curls, soaked in hot water for 10 minutes or 2 cups of cooked or canned beans, drained and rinsed
8 cups vegetable stock
170 grams/6 ounces pasta (gluten-free, if needed)
4 cups spinach, coarsely chopped
