1 teaspoon whole cumin seeds
1 teaspoon whole coriander seeds
4 green cardamom pods
1 2-inch cinnamon stick
6 curry leaves, fresh or dried
1 teaspoon garam masala
1 small onion, diced
1 inch of ginger, peeled and minced
8 mushrooms, sliced
1 cup of frozen peas
1-1/2 cups brown basmati rice
3 cups water
cilantro to taste
lemon wedges for garnish
After 5 minutes, when the mushrooms are cooked, add the drained rice, garam masala, and curry leaves. Stir to combine. Add 3 cups of water. Cover with a lid. Bring to a boil over medium-high heat, reduce heat to low, and simmer for 25 minutes. |
