All you need for this quick recipe is 1/2 cup of leftover cooked rice (white or brown), a jar of marinated roasted red peppers, some veggie stock, and some basic seasonings. Put everything in the blender and blend until smooth. Gently heat in a saucepan before serving, if desired.

1 cup vegetable stock
1/2 cup leftover cooked rice (white or brown)
4 marinated roasted red peppers from a jar
2 Tablespoons rice vinegar
2 teaspoons dried basil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt (optional)
1/4 teaspoon cayenne pepper
1/8 teaspoon freshly cracked black pepper
