Beans and Rice
I love Asian pears. These large round fruits have the sweetness and bite of apples and the juicy texture of pears. The sweet-tart brightness of this recipe really allows the flavour of the pears (or apples) to shine. Equally delicious for dessert or breakfast, try this topping over Gingerbread Pancakes (recipe coming next week!), waffles, oatmeal, rice or tapioca pudding, or simply in a bowl on its own. Chop the Asian pears or apples into bite-sized pieces and add to a medium saucepan along with the raisins, lemon zest and juice, maple syrup, and 1/4 cup of water. Bring to a boil over medium heat, reduce heat to medium-low and simmer 5 - 10 minutes until the pears or apples are soft but not mushy. Mix the cornstarch with the cold water and stir it into the sauce. Simmer until thickened, about 2 minutes. Turn off the heat and set aside until ready to serve.
